The caper plant, Capparis spinosa, is a Meditteranean bush which is known over centuries and also written in the Bible and other ancient documents.
Caper is a tiny green edible bud of the caper plant, which has not blossomed and Caperberry is a fruit, which blossoms if caper buds are not picked in time. Caperberry is picked with its stem and has seeds, also harder than the Caper, and is about the size of an olive.
Both the Caper buds and Caperberries are picked by hand during harvest season between June and August.
Capers and Caperberries are edible and pickled in brine, vinegar, or salt and they are very popular in Mediterranean dishes, salads, pizza, etc.

Production Steps of Capers and Caperberries
Capers and Caperbuds grow naturally and handpicked carefully at the harvest time (June – August), then transported to the factory.
Capers and Caperberries are calibrated into sizes after quality check and stored in the warehouse with regular daily checks.
Upon order, Capers and Caperberries stored in the warehouse are re-processed with cleaning and selection then packed in salt or vinegar in jars or drums depending on the buyer’s demand.
